PFAS

Head Topics: Coffee, white rice and eggs are linked to higher PFAS levels in the human body.

The study, which was designed to identify foods with higher levels of PFAS, found that people who consume more white rice and coffee, as well as eggs and seafood, have more toxic chemicals in both their breast milk and plasma.

Megan Romano is a Dartmouth researcher who was the lead author. “The results clearly point towards the need for environmental stewardship and keeping PFAS away from the environment and the food chain,” she said. “Now, we are in a situation that they are everywhere and will remain even if aggressive remediation is done.”

Food is believed to be the main exposure route, even though regulators are focused on reducing water pollution. Food and Drug Administration has been criticized by some for failing to protect the food supply of the country. Among its many controversies was the fact that it changed its testing methods in order to appear as if food tested did not contain PFAS when, in reality, it contained levels that many critics say are alarming.

Researchers found that backyard chicken eggs had higher levels of PFAS. Romano suggested this could be due to the fact that these birds are more often fed table scraps. Researchers have found that sewage sludge contaminated with PFAS, which is used to make cheap fertilizer, can also contaminate soil, from which chickens eat.
